Our final post before we break for summer. We'll be back in August for sure and maybe popping in here and there with our favourite summer recipes... like this one!

Summer is just around the corner in most parts of the world. But in our part of the world the heat is already on full blast.

This is a smoothie that I stumbled upon in a little cafe in Chennai. Fell in love with it from the first sip. Of course I couldn't go back to the cafe everyday so I concocted my own version of it at home and have enjoyed this yummy drink on hot summer afternoons.

I realised that my husband enjoyed it too so I decided to experiment it on a group a guys who came home for Bible study. It became an instant hit! These guys loved it so much that they would buy us the mangoes and the milk and mint leaves and request us to make them the smoothie every bible study during the summer.

Warning - This smoothie is definitely not recommended for the calorie conscious but if you do want to indulge in an amazing drink...then this is divine nectar.

Mango Mint Smoothie

Ingredients (makes two regular sized glasses )

1 ripe mango - deseeded and cut into cubes without the skin

1 sprig of mint leaves
1 cup of milk
2 tablespoons sugar (make it less or more according to taste)
Few ice cubes

Method

Blend everything together in a food processor/mixer until well blended.

Serve cold in a matka glass garnished  with a mint leaf.

Tip: Milk can be substituted with plain yogurt or plain curd and voila you have mango mint lassi!
